Artisanal pasta made with durum wheat semolina from Russello or Timilia, ancient varieties from organic farming, selected according to seasonal availability. Bronze-drawn and slowly dried at low temperatures, to preserve nutritional properties and ensure a perfect texture that holds sauces.
